❤️ Valentine’s Red Devilled Eggs

Colour of the Week - RED


Valentine’s doesn’t have to mean sugar. It can mean nourishment, warmth and heart-led food.


These are creamy, slightly tangy, beautifully pink-red devilled eggs - inspired by the Dutch-style chopped onion version and given a Valentine twist.


🛒 What You’ll Need (Makes 12 halves)

  • 6 large free-range eggs

  • 2–3 tbsp mayonnaise (or Greek yoghurt for a lighter option)

  • 1 tsp Dijon mustard

  • 1 tbsp very finely chopped red onion

  • 1 tsp apple cider vinegar

  • 1/2 tsp sea salt

  • Pinch of black pepper

  • Colour option of choice (see below)


Optional garnish:

  • Chopped fresh chives

  • Light sprinkle smoked paprika

  • Tiny beet cubes

  • Edible petals (if you’re feeling extra 🌸)


🥚 Step 1 - Boil the Eggs Properly

  1. Place eggs in a saucepan and cover with cold water.

  2. Bring to the boil.

  3. Once boiling, reduce to a gentle simmer for 9 minutes.

  4. Transfer immediately into a bowl of ice-cold water.

  5. Leave until fully cooled, then peel.


Tip - The cold shock prevents the grey ring around the yolk and keeps them looking fresh and bright.


🔪 Step 2 - Make the Filling

  1. Slice eggs lengthways.

  2. Carefully remove yolks into a bowl.

  3. Mash yolks until smooth.

  4. Add:

    • Mayonnaise or yoghurt

    • Dijon mustard

    • Apple cider vinegar

    • Salt and pepper

    • Very finely chopped red onion

  5. Mix until creamy and smooth.


❤️ Step 3 - Choose Your Red


Most people don’t have beetroot powder in the cupboard - so here are easy options:


🌿 Option 1 - Fresh Cooked Beetroot (Natural & Easy)

  • Finely grate 1–2 tsp ready-cooked beetrootOR

  • Mash a small cube and stir into mixture


This creates a soft blush pink-red and adds gentle sweetness.


💖 Option 2 - Paprika + Tiny Drop of Colouring

  • Add 1/4 tsp paprika

  • Add 1–2 drops red food colouring


This gives a deeper Valentine red.


🌸 Option 3 - Red Onion Juice (Subtle Pastel)

If you’ve chopped red onion already, press some of the juice into the mixture.This creates a soft pink tint - more pastel unicorn than bold red.


🍷 Option 4 - Pomegranate Juice

Add 1 tsp reduced pomegranate juice for a tangy pink tone.


❤️ Option 5 - The Simple Option

Just use 1–3 drops red food colouring.Joy counts too.


🎀 Step 4 - Fill & Finish

  1. Spoon mixture into a piping bag (or use a teaspoon).

  2. Pipe back into egg whites.

  3. Garnish lightly with chives, paprika or petals.

  4. Chill for 30 minutes before serving.
